Sweet and Spicy Chicken-Bacon Nibbles

What could go wrong with an appetiser of cubed chicken wrapped with bacon and coated with brown sugar and chilli powder then baked until crispy. Easy to make in small or large quantities.

  • 300g skinless boneless chicken breasts cut into 3 cm cubes
  • 350 g streaky bacon (rind removed)
  • ½ cup dark brown sugar
  • 1 tablespoon chilli powder (optional)
  1. Preheat oven to 175°C.
  2. In a large mixing bowl, combine the brown sugar, and chilli powder (if using). Mix well.
  3. Cut the bacon in half, roll around the chicken cubes and secure with a tooth pick. (see notes)
  4. Coat a rack and grilling pan with nonstick cooking spray.
  5. Roll the bacon-wrapped chicken pieces in the brown sugar mixture. (Be sure to pack some in the ends). Place on the rack.
  6. Bake 175°C for 30 - 35 minutes or until the bacon is crisp.
These can be made ahead up to step 3 and covered and refrigerated until closer to the time needed. Simply remove from fridge and continue at step 4.
