Peanut Butter Blonde Brownies

These frosted peanutty blonde brownies are the perfect accompaniment to your morning coffee. Peanut butter adds a chewy texture to the blondies and a burst of flavour to the frosting.

Peanut Butter Blonde Brownies
Serves: 24
Ingredients
  • 1 cup brown sugar
  • ⅓ cup sugar
  • ¾ cup shortening
  • 2 eggs
  • 2 teaspoons vanilla essence
  • ¼ cup water
  • 1 cup smooth peanut butter
  • 2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
For peanut butter frosting
  • ½ cup butter
  • 1 cup smooth peanut butter
  • 4 cups icing sugar mixture
  • ⅓ cup cream
Instructions
  1. Beat the brown and white sugars and shortening together in a bowl
  2. Add the eggs, vanilla essence, water, and peanut butter. Beat until incorporated.
  3. In another bowl, sift flour, baking powder, baking soda and salt together and add it to peanut butter mixture.
  4. Take a greased and floured 33 x 23 cm baking pan and pour in the cookie batter.
  5. Bake at 175°C for 25 to 30 minutes.
  6. Allow to cool and prepare frosting.
  7. To make the frosting - In a large bowl, beat the butter and peanut butter until light and fluffy. Slowly beat in ½ of the icing sugar mixture. Mix in ¼ cup of the cream. Beat in the remaining icing sugar mixture. If necessary, add a little more cream or milk until the frosting reaches a good spreading consistency.
