Choco-Weetbix Slice

Cereal doesn’t have to be confined to the breakfast of champions, and these Weetbix slices prove the point. Add some cocoa and you have a great chocolate fibre treat.

  • 150 g butter, melted
  • 4 crushed weetbix
  • ½ cup white sugar
  • 1 cup flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking powder
  • 1 drop vanilla essence
For the icing
  • 1½ cups icing sugar
  • ½ cup desiccated coconut
  • 1 teaspoon cocoa powder
  • 25 g butter
  • hot water to mix
  1. Mix all dry ingredients in a bowl and make a well in the centre.
  2. Add the melted butter and vanilla essence. Mix together, then press into a slice tin.
  3. Bake at 180°C for 10 minutes.
  4. Ice while hot and cut into squares.
For the icing
  1. Put first three ingredients into a bowl, add the butter.
  2. Gradually add enough hot water to melt butter, blending to form a smooth, spreadable icing.
  3. Spread over slice while hot then cut into squares once cooled a little.
