Tomatoes

So often thought of as a summer vegetable fruit, tomatoes actually improve as the summer progresses, so tomatoes bought at the beginning of autumn will have a most intense flavour. The flavour depends largely upon the variety and how the fruit has been grown and ripened: some cheap imported tomatoes are grown under plastic tunnels, picked under-ripe, then artificially ripened with ethylene gas, a plant hormone. Sun-warmed tomatoes picked straight from the vine are arguably the ideal way to enjoy tomatoes. Tomatoes are available to buy on and off the vine from supermarkets and farmers' markets.


Barberton Hot Sauce

Barberton is known for it’s fried chicken dinner which includes this tomato-rice dish called “hot sauce”. This “hot sauce” can be eaten as a dipping sauce or a side dish.

Crumbed Green Tomatoes

These wonderful Southern-fried green tomatoes make a great side dish for summer. Flour, egg, and breadcrumbs turn into a coating that sticks steadfastly to green tomato slices and becomes perfectly crisp and light when fried. It’s hard to improve upon a tomato slice fried this way, but you might like to melt a slice of mozzarella cheese on top of each tomato round.

Escalivada – Catalan Roasted Vegetables

Escalivada is a typical preparation of Catalan cuisine that consists of several types of grilled vegetables, such as eggplants, sweet red peppers, red tomatoes, and sweet onions.
