Flavoured Butter Variations
An easy way to pep up a steak meal is with the addition of a flavoured butter. Here is a collection of varieties you can easily make at home.

Ingredients
Garlic and Parsley Butter
  • 4 tablespoons finely chopped parsley
  • 2 cloves garlic,crushed
Basil, Parmesan & Tomato Butter
  • 8 tablespoons freshly grated parmesan
  • 15 shredded basil leaves
  • 2 tablespoon finely chopped sundried tomatoes
Lime, Coriander and Chilli Butter
  • zest of 1 lime
  • 1 - 2 small red chillies, deseeded and finely chopped
  • 4 tablespoon chopped fresh coriander
Lime, Ginger and Chilli Butter
  • zest of 1 lime
  • 2 teaspoons grated fresh ginger
  • 1 - 2 small red chillies, deseeded and finely chopped
Horseradish and Shallot Butter
  • 1 teaspoon horseradish, grated
  • 1 shallot, finely chopped
Garlic, Parsley and Lemon Butter
  • 2 cloves garlic, finely chopped
  • 2 tablespoons parsley, finely chopped
  • 1 tablespoon lemon zest
Garlic & Herb Butter
  • 2 garlic cloves, crushed
  • 2 tablespoons chopped fresh herbs
Capers, Mustard and Chive Butter
  • 2 teaspoons baby capers, finely chopped
  • 2 teaspoons seeded mustard
  • 2 tablespoons freshly snipped chives
Instructions
  1. Take 200 g of butter out of the fridge for an hour to soften.
  2. Beat the butter with a wooden spoon until it is soft and creamy, then beat in the flavouring combination you choose.
  3. Tip the flavoured butter onto a square of clingwrap, roll it around the butter to form a sausage shape, then twist the ends to seal.
  4. The butter is now ready to be stored for up to 3 days in the fridge or up to a month in the freezer.
