Berry Custard Gratin
A quick and easy dessert put together in 5 minutes and ready in 20. What could be easier in a busy kitchen.

  • 2 cups frozen mixed berries (see notes)
  • 2 eggs
  • ¾ cup cream
  • 1 teaspoon vanilla
  • ½ cup plain flour
  • ¼ cup caster sugar
  1. Preheat oven to 200°c.
  2. Lightly grease 4 shallow ovenproof dishes. Divide 2 cups mixed berries between dishes. Place onto a baking tray.
  3. Whisk eggs, cream and vanilla together. Combine plain flour and caster sugar in a bowl. Gradually whisk in cream mixture until smooth. Spoon mixture over berries.
  4. Bake for 20 minutes until golden. Serve.
Use frozen berries straight from the freezer - do not defrost.
