Creamy Rice Pudding

  • 1½ cups water
  • ¾ cup uncooked long-grain rice
  • 2 cups milk, divided
  • ⅓ cup sugar
  • ⅛ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 egg, beaten
  • ½ cup raisins (optional)
  • ¾ tablespoon butter
  • ½ teaspoon vanilla essence
  1. In a saucepan, bring water to a boil. Stir in rice, reduce heat to low, cover, and simmer for 20 minutes.
  2. In a separate saucepan, combine cooked rice, 1½ cups milk, sugar, cinnamon, and salt. Cook over medium heat until thick and creamy, 18 - 20 minutes.
  3. Stir in remaining ½ cup milk, egg, and raisins, if desired. Cook 2 - 3 minutes or until it begins to thicken up, stirring constantly.
  4. Remove from heat and slowly stir in the butter and vanilla.
