Potato fritters are an inexpensive and delicious meal. A simple combination of potatoes and other ingredients, shallow fried until crisp.
- 2 kg finely grated potatoes
- 2 small onions, finely chopped or grated
- 1 tablespoon parsley
- 2-4 eggs
- 60 g flour
- 2- 3 teaspoons salt
- Combine potatoes, onion, egg, parsley and sifted flour in a mixing bowl. Stir with a wooden spoon, until ingredients are just combined.
- Heat oil in a heavy-based frying pan. Spoon tablespoons of potato mixture into the pan. Cook over medium high heat until golden brown and cooked through.
