Ingredients
  • 110 g quinoa, cooked according to packet instructions
  • 1 tablespoon chopped fresh mint
  • 4 spring onions, both white & green parts, chopped
  • 2 tablespoons chopped fresh coriander
  • 1 medium mango, peeled, finely chopped
  • 2 tablespoons olive oil
  • juice of ½ lemon
Instructions
  1. Combine all the ingredients in a bowl and mix together.
