Shattah - Middle Eastern Hot Sauce

Saudis like their Kabsa with this hot sauce. Made from a combination of simple ingredients that yield huge flavours.

  1. 8 cloves garlic
  2. 3 red Jalapeño peppers, stem removed
  3. 15 Thai bird chillies, stems removed
  4. 1 cup fresh flat leaf parsley
  5. 1 cup fresh coriander
  6. ½ tablespoon white vinegar
  7. 2 tablespoons olive oil
  8. 1 teaspoon salt
  9. 1 teaspoon cracked black pepper
  10. 1 teaspoon cumin powder
  11. ¾ cup tomato paste
  12. 1 cup water
  1. Place all ingredients into a blender or food processor and pulse until a nice, smooth mixture.
  2. Add the mixture to a sauce pan, cover, and place on medium heat for about five minutes or until it has fully came to a boil.
  3. Stir, remove from the heat and let cool.
