Radish, Carrot, and Cucumber Salad

This is a delicious crunchy combination of fresh vegetables for a tart side salad at your next BBQ. The mint and red wine vinegar can be substituted with other fresh herbs or vinegars if you want a different flavour combination.

Radish, Carrot, and Cucumber Salad
This is a delicious crunchy combination of fresh vegetables for a tart side salad at your next BBQ. The mint and red wine vinegar can be substituted with other fresh herbs or vinegars if you want a different flavour combination.

Ingredients
  • 1 medium long green cucumber
  • 1 medium carrot
  • 6 medium sized red radishes
  • 15-20 fresh mint leaves, minced or very finely chopped
  • 1½ tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • pinch each of salt and pepper
Instructions
  1. Peel and thinly slice the cucumber and carrot. Thinly slice the radishes.
  2. Place all three vegetables in a bowl.
  3. In a small bowl, whisk together the minced mint, olive oil, red wine vinegar, salt, and pepper.
  4. Pour dressing over the vegetables and mix well.
  5. Cover the bowl and put in refrigerator to marinate for about an hour before serving.
  6. Serve salad on it's own or over a bed of baby spinach.
