Abalone and Scallop Fritters
Abalone and scallop fritters are something different and pretty tasty. They also have the benefit of usually coming out tender. The fritter seen here are served with a Lemon Caper Sauce.

  • 500g abalone
  • 500g scallops
  • 1 egg, beaten
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 2 tablespoons butter
  • flour
  • lemon slices (optional)
  1. Cube abalone. Put into food processor. Process until well ground. Remove abalone.
  2. Add scallops to processor and grind well.
  3. Combine abalone, scallops, egg and salt. Shape into flat patties.
  4. In a skillet, heat oil and butter.
  5. Dip patties in flour. Shake off excess.
  6. Fry quickly, a minute or less, per side. If desired, serve with lemon slices.
