Linguine with Crab

This simple but elegant pasta dish combines linguine pasta dressed with fresh, zesty crab.

Linguine with Crab
Ingredients
  • 300 g fresh crab meat
  • 1 clove garlic, crushed
  • 2 red Thai chillies, seeded, sliced thinly
  • ½ cup dry white wine
  • 1 tablespoon finely grated lemon rind
  • 375g linguine
  • ½ cup loosely packed, coarsely chopped fresh flat-leaf parsley
  • 1 small red onion, thinly sliced
  • ⅓ cup peanut oil
Instructions
  1. Cook grab, garlic and chilli an large heated non-stick frying pan stirring, until crab is just cooked.
  2. Add wine and rind; bring to a boil. Reduce heat; simmer, uncovered, until wine reduces by half.
  3. Meanwhile, cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.
  4. Place pasta in large bowl with crab mixture and remaining ingredients; toss gently to combine.
