Citrus Snapper

Orange and grapefruit zest combined with spices go well with the delicate flavours of snapper fillets.

Citrus Snapper
  • 500g snapper fillets
  • salt
  • freshly ground black pepper
  • freshly grated nutmeg
  • 1½ teaspoons grated orange rind
  • 1 teaspoon grated grapefruit rind
  • fresh coriander, to garnish
  1. Preheat oven to 200ºC.
  2. Put the fillets in a lightly buttered baking dish. Sprinkle them lightly with salt and pepper and nutmeg and distribute the grated rinds on top.
  3. Cover with foil and bake 15 minutes.
