Orange and grapefruit zest combined with spices go well with the delicate flavours of snapper fillets.
- 500g snapper fillets
- freshly ground black pepper
- freshly grated nutmeg
- 1½ teaspoons grated orange rind
- 1 teaspoon grated grapefruit rind
- fresh coriander, to garnish
- Preheat oven to 200ºC.
- Put the fillets in a lightly buttered baking dish. Sprinkle them lightly with salt and pepper and nutmeg and distribute the grated rinds on top.
- Cover with foil and bake 15 minutes.
