Garlic and Herb Snapper Fillets

This delicious grilled snapper recipe uses garlic, chervil, and dill to enhance the fish’s mild flavour.

Ingredients
  • 2 tablespoons lemon juice
  • 2 snapper fillets (200 g each)
  • 2 teaspoons grated lemon peel
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon dried chervil
  • ¼ teaspoon dill weed
  • ¼ teaspoon pepper
Instructions
  1. Spoon lemon juice over both sides of fillets. Combine the lemon peel and seasonings; sprinkle over fillets.
  2. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fish, uncovered, over medium heat for 3 minutes on each side or until fish flakes easily with a fork.
Notes
Buying Snapper - Sold whole (gilled and gutted), in cutlet/steak and fillet (often skinned) forms. In whole fish look for lustrous skin, firm flesh, and a pleasant, fresh sea smell. In cutlets, steaks and fillets, look for cream-pink, firm, lustrous, moist flesh without any brown markings or oozing water and with a pleasant fresh sea smell.
