Stewed Peppers - Pimientos Estofados
This side dish or garnish of stewed peppers (capsicum) goes especially well with fish or any fatty meats such as pork or duck.
- 1 red capsicum
- 1 green capsicum
- 1 yellow capsicum
- 100 g sugar
- 1 pinch of salt
- ½ cup oil
- 1 sprig of thyme
- Wash the capsicums and blanch or char over a flame so that they can be easily peeled. Remove the seeds and cut into strips.
- Place in a pan with the sugar, salt, thyme, and oil. Cover the pan and place over a low heat. Cook for about two hours.
- Remove from the heat and leave to cool.
