Stewed Peppers - Pimientos Estofados
This side dish or garnish of stewed peppers (capsicum) goes especially well with fish or any fatty meats such as pork or duck.

  • 1 red capsicum
  • 1 green capsicum
  • 1 yellow capsicum
  • 100 g sugar
  • 1 pinch of salt
  • ½ cup oil
  • 1 sprig of thyme
  1. Wash the capsicums and blanch or char over a flame so that they can be easily peeled. Remove the seeds and cut into strips.
  2. Place in a pan with the sugar, salt, thyme, and oil. Cover the pan and place over a low heat. Cook for about two hours.
  3. Remove from the heat and leave to cool.
