This is a popular chicken soup dish which is primarily flavoured using preserved lemons. Its slight tangy flavour makes it a delicious dish.
Ingredients
  • ½ chicken (cut into 8 pieces)
  • 1 preserved lemon (cut in half)
  • 5 cups water
  • 2 cloves garlic (unpeeled)
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ onion, sliced
  • 1 spring onion, chopped
  • black pepper, to taste
Instructions
  1. In a soup pot, place chicken, onion, preserved lemon, garlic and water. Cook until the chicken is cooked through, and is tender to your liking
  2. Season with sugar, salt and fish sauce
  3. Sprinkle spring onion and black pepper for garnish. Serve hot with rice
