Thick Cut Potato Chips (Fries)

Two-stage Frying Method

If you want to make chef-standard chips try this two-stage frying method.

Thick Cut Potato Chips (Fries)
  • 750g Desirée potato, (about 3 medium large), peeled
  1. Cut chips to equal width.
  2. Heat oil to 130°C and fry the chips for 7-8 minutes or until cooked through but uncoloured. Drain and leave to cool (preferably in the fridge overnight).
  3. Heat oil to 180°C and fry the chips until golden and crispy. Drain and serve.
