Colby and Spinach Quiche
This elegant recipe for a savoury spinach quiche has a white sauce base.
Ingredients
For quiche mix
  • 200 ml milk
  • 150 ml thickened cream
  • 3 eggs
  • ¼ teaspoon salt
  • pepper, to taste
  • vegetable stock powder, to taste
For filling
  • 100 g spinach, chopped and pre-cooked
  • 50 g onions, chopped and pre-cooked
  • 100 g finely grated Colby cheese
  • ½ teaspoon basil pesto
  • 20g roasted pine nuts (optional)
For the dough
  • 350 g short pastry
Instructions
  1. Line a flan ring with the pastry and let rest for 30 minutes, before baking blind until lightly set.
  2. Add filling and whisk all ingredients of the quiche mix together, strain and pour over the filling.
  3. Bake at 170°C until golden brown and set.
  4. Serve warm with salad.
