This tender side dish of diced carrots has a pleasant citrus flavour and a lovely orange glaze.

Ingredients
  • 450 g carrots
  • 1 cup fresh orange juice
  • 1 tablespoon unsalted butter
  • ¼ teaspoon each salt and freshly ground black pepper
  • 1 tablespoon fresh dill sprigs, for garnish (optional)
Instructions
  1. Cut the carrots into 3 cm chunks.
  2. Combine the carrots and orange juice in a large saucepan.
  3. Add enough water to just cover the carrots. Add the butter and ¼ teaspoon each salt and pepper.
  4. Bring to a boil, and then reduce the heat to maintain a steady simmer. Cook, stirring occasionally, until the carrots are tender and the liquid has reduced to a glaze, about 20 minutes.
  5. Garnish with the dill and serve
