Mangada - Mango Jam
Here is a very quick and easy recipe for mango jam, also called Mangada by the Kokani people.
  • 5 cups mango puree
  • 1 cup sugar
  1. To prepare mango jam, blend together the pureed mango pulp and sugar.
  2. Pour the blended mixture into a deep pan and stir continuously on slow heat until the jam begins to thicken. It will take a while, an hour or two at least! The longer you keep the jam on the heat, the thicker it’s consistency.
  3. Once done, turn off the heat and leave the jam to cool completely before storing.
Use mangoes and sugar in the proportion 1 cup of sugar to 5 cups of mango pulp
