Tuk Meric - Cambodian Lime and Black Pepper Dipping Sauce
Tuk Meric is one of the most simple sauces to make and can be found in southern Cambodia - it is nothing more than fresh lime juice blended with ground black pepper. The quality of your pepper is going to make a huge difference to the end result and if you can get your hands on some Kampot pepper so much the better.
2 teaspoons freshly ground Kampot or black pepper (don’t skimp on the pepper)
½ teaspoons salt
½ teaspoons sugar
2 teaspoons freshly squeezed lime juice
Mix the four ingredients in a small shallow dish and use as desired
Kampot pepper tastes like other black pepper, except that it is stronger and more fragrant.
