This quick and easy salad is packed with protein and goes well paired with fish or chicken.
- 110 g quinoa, cooked according to packet instructions
- 1 tablespoon chopped fresh mint
- 4 spring onions, both white & green parts, chopped
- 2 tablespoons chopped fresh coriander
- 1 medium mango, peeled, finely chopped
- 2 tablespoons olive oil
- juice of ½ lemon
- Combine all the ingredients in a bowl and mix together.
