Tandoori Chicken Pizza

This is a very interesting, non-traditional pizza. Tandoori chicken is a popular South Asian dish consisting of roasted chicken prepared with yoghurt and spices. Combine this spicy chicken with a tomato-yoghurt sauce and you have the perfect South Asian style Tandoori Chicken Pizza.

Tandoori Chicken Pizza
For tomato-yoghurt sauce
  • 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • ½ cup diced tomato
  • 1 teaspoon chopped fresh ginger
  • ⅛ teaspoon cumin
  • 1 teaspoon garam masala
  • ¼ teaspoon minced jalapeño
  • ¼ cup chicken stock
  • ¼ cup plain yoghurt
  • 1 teaspoon chopped fresh coriander
  • 1 tablespoon butter
For tandoori chicken
  • 1 teaspoon chopped fresh ginger
  • 1 teaspoon minced garlic
  • ½ teaspoon minced jalapeño
  • 2 tablespoons tandoori paste
  • 2 tablespoons plain yoghurt
  • 1 tablespoon butter, melted
  • 2 boneless chicken breasts
For the pizza
  • 1 qty basic pizza dough
  • ½ small zucchini, sliced into thin slices
  • ½ small yellow squash, sliced into thin slices
  • 1½ cups mozzarella cheese, shredded
  • 2 tablespoons chopped fresh coriander
  • ½ cup mango chutney
To make the tomato-yoghurt sauce
  1. Heat garlic in olive oil over medium heat until translucent, 1-2 minutes.
  2. Add next 7 ingredients (diced tomato through to yoghurt). Reduce heat and boil the mixture until all excess liquid has evaporated, about 3 minutes.
  3. Turn off heat and quickly blend in coriander and butter; set aside.
To make the tandoori chicken
  1. Combine the first 5 ingredients (ginger through to yoghurt).
  2. Coat the chicken breast with the resulting mixture.
  3. Pour the butter over the marinating chicken breasts and stir to coat well.
  4. Prepare a hot grill; grill the chicken for 5-7 minutes per side (discard the marinade).
  5. Remove from the grill and chill.
  6. Slice the chilled chicken into 2 - 3 mm slices and set aside in refrigerator.
To make the pizza
  1. Preheat oven to 220°C
  2. Prepare pizza dough
  3. Use a large spoon to spread ½ cup tomato-yoghurt sauce evenly over the surface of the prepared pizza dough within the rim (use a bit more if you wish)
  4. Place slices of yellow squash and zucchini over the sauce; do not overlap
  5. Cover the sauced area with the mozzarella and distribute the sliced tandoori chicken evenly over the cheese (or you can put the chicken on first and top with the cheese - whichever you prefer).
  6. Transfer the pizza to the oven; bake until crust is crisp and golden and the cheese is bubbly at the centre, about 10-15 minutes.
  7. Carefully remove the pizza from the oven and sprinkle 1 tablespoon chopped fresh coriander over the top.
  8. Slice and serve with mango chutney. The remaining tomato-yoghurt sauce can be used to drizzle over the top also.
Fresh coriander can be substituted with fresh mint.
