Oyster Omelette

Oyster omelette is a Chinese dish that is widely known in Taiwan, Fujian, and many parts of Asia for its savoury and addictive taste. Variations of the dish preside in some southern regions of China although the actual taste and appearance of these can vary by a lot from the original version from Taiwan. Oyster Omelette is often sold in night markets, and has constantly been ranked by many foreigners as the top cuisine from Taiwan and one of the most addictive food in the world.

Oyster Omelette
Serves: 3
  • 1½ dozen fresh oysters
  • 3 eggs
  • 4 - 6 Chinese cabbage leaves, sliced thinly
  • 6 spring onions, finely chopped
For batter
  • ½ teaspoon salt
  • ½ tablespoon vinegar
  • 3 tablespoons tapioca flour
  • 1½ tablespoons cornflour
  • 1 tablespoon flour
  • 1 cup water
  1. Rinse spring onions and chop finely.
  2. Add the flour batter ingredients and stir well.
  3. Heat oil in frying pan and cook ⅓ of the oysters for a minute, then add ⅓ of the flour batter and cook until batter becomes translucent.
  4. Add ⅓ of the vegetables and 1 egg into the pan. Fry until golden on one side (especially if you like this dish creamy).
  5. Serve on plate with side of sweet chilli sauce.
