Baked Red Snapper with Ricotta Stuffing

An easy fish recipe with tasty stuffing for the perfect seafood meal.

Baked Red Snapper with Ricotta Stuffing

  • 1kg - 1.5kg red snapper
  • salt
  • 2 tablespoons olive oil
For stuffing
  • ½ cup chopped celery
  • 1½ tablespoons olive oil
  • ¾ cup ricotta cheese
  • ½ teaspoon salt
  • 2 tablespoons grated lemon rind
  • ½ cup chopped onion
  • 1 cup dry breadcrumbs
  • ¼ cup diced and peeled fresh lemon
  • 1 teaspoon paprika
  1. Clean, wash and dry fish. Sprinkle inside and out with salt.
  2. Prepare stuffing: Saute celery and onion in olive oil until soft. Remove from heat and combine with rest of stuffing ingredients, blending well.
  3. Stuff fish loosely. Close opening with small skewers or toothpicks.
  4. Place in well-greased baking pan. Brush with 2 tablespoons olive oil and bake in pre-heated 175°C oven for 40-60 minutes or until fish flakes easily with a fork.
  5. Baste occasionally with drippings while fish is baking.
