Snapper Fillets with Orange Sauce

A tangy orange sauce, seasoned with garlic and ginger, really brings out the best in these red snapper fillets.

Snapper Fillets with Orange Sauce
  • 900 g red snapper fillets
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • 3 tablespoons orange juice
  • 1 teaspoon grated orange peel
For orange sauce
  • 1 clove garlic, peeled
  • 2 tablespoons butter
  • 3 tablespoons orange juice
  • ⅛ teaspoon ground ginger
  • 2 tablespoons minced fresh parsley
  1. Place the fish in a single layer in a 33cm x 23cm baking dish coated with cooking spray; sprinkle with salt and pepper.
  2. In a small saucepan over medium heat, cook the garlic in butter for 1 minute; pour over fish. Drizzle with orange juice; sprinkle with orange peel. Bake, uncovered, at 200°C for 10-15 minutes or until fish flakes easily with a fork.
  3. In a small saucepan over medium heat, cook garlic in butter for 2-3 minutes or until golden brown; discard garlic.
  4. Stir orange juice and ginger into butter; heat through.
  5. Cut fish into serving-size pieces; drizzle with orange sauce and sprinkle with parsley.
