Radish and Mango Pickled Slaw
Sweet, spicy, and crunchy, this colourful slaw goes well with any grilled white meat such as pork, chicken, and seafoods such as prawns.

  • 1 medium mango, peeled
  • 8 radishes
  • ½ fresh chilli, seeded
  • ½ cup rice vinegar
  • 1½ tablespoons sugar
  • 1½ tablespoons pickling spice
  • ¼ teaspoon salt
  1. Cut mango, radishes and chilli into julienne strips. Place in large glass bowl. Set aside.
  2. Place remaining ingredients in small saucepan. Bring to simmer on medium heat, stirring to dissolve sugar and salt.
  3. Reduce heat to low; simmer 5 minutes. Let stand 5 minutes to cool.
  4. Strain over fruit mixture, discarding the spices afterwards.
  5. Refrigerate 1 hour or until cooled.
  6. Serve or leave covered until ready to use.
