Tomato, Feta, and Sweetcorn Salad

There is nothing like fresh sweetcorn and rich red tomatoes to tell you it is summer, and when combined with the salt and peppery tones of feta and arugula you have a great hot weather salad.

Tomato, Feta, and Sweetcorn Salad

  • 3 cups fresh corn kernels
  • 2 cups baby arugula
  • 115 g feta, crumbled
  • 2 tablespoons finely chopped fresh oregano
  • ⅓ cup olive oil
  • 2¼ tablespoons red wine vinegar
  • salt and freshly ground black pepper, to taste
  • 900 g fresh ripe red tomatoes, sliced
  1. Combine corn kernels, arugula, feta, oregano, olive oil, and vinegar in a bowl. Season with salt and pepper.
  2. Serve sliced tomatoes topped with the corn mixture.
