Ab-Doogh-Khiar – Persian Summer Soup

This Persian Summer Soup is filled with herbs, nuts and raisins and is delicious with grilled bread. Perfect on a hot summer day!

Ab-Doogh-Khiar - Persian Summer Soup

  • 3 cups plain yoghurt
  • 3 small cucumbers, finely chopped (avoid the large seeded cucumbers)
  • 1 small onions, finely chopped (better with sweet red onions)
  • 3 red radishes
  • 10 walnuts, finely crushed
  • ¾ cup seedless raisins
  • 10 leaves fresh basil or mint, or both, chopped
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 tablespoon dried mint leaves, crushed
  1. Whisk the yoghurt until smooth and soft
  2. Add all the remaining ingredients to the yoghurt and mix
  3. Add one cup of crushed ice
  4. Add 2 cups of cold water and mix again
  5. Serve with pita bread
