Prawn and Vegetable Stir-fry

Juicy prawns and fresh vegetables are stir-fried to make this delicious meal. Great on its own or with fried rice or noodles.

Prawn and Vegetable Stir-fry
Recipe type: Seafood
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 red capsicum (bell pepper), cut into thin strips (optional)
  • 1 medium carrot, thinly sliced
  • 120 g snow peas, trimmed
  • 120 g sliced fresh mushrooms
  • 450 g large prawns, peeled and deveined
  • 1½ tablespoon soy sauce
  • ½ teaspoon black pepper
  • 2 teaspoons sesame seeds (more or less, to taste)
  1. Heat the oil in a large wok over a high heat. Add garlic and saute until tender (about 1 minute).
  2. Add carrot, capsicum (if using), snow peas, and mushrooms, and stir-fry 2 minutes.
  3. Add remaining ingredients and stir-fry 2 to 3 minutes, or until shrimp are pink and vegetables are crisp-tender. Serve immediately.
