Baked Carrot Sticks

  • 500 g fresh carrots
  • 1 tablespoon cornflour
  • 1 tablespoon vegetable oil
  • 1 teaspoon finely chopped fresh tarragon
  • a grind or two freshly ground black pepper
  • salt and freshly ground black pepper, to taste
  1. Heat oven to 200°C.
  2. Cut carrots into 1 cm thick sticks, and mix with cornflour and a little black pepper.
  3. Toss with vegetable oil.
  4. Spread in a single layer on a baking tray lined with baking paper, and bake for 40 - 45 minutes, turning halfway through.
  5. Mix a little salt, black pepper, and fresh tarragon and toss through the cooked carrot sticks.
